Kataif- Cheese/ Arabic Pancakes with Cheese

Thengai or Coconut Barfi is a sure hit sweet in our home but Ive never succeeded in making a perfect one. Then one day I looked into this recipe in Kamala Boopathy's blog http://www.cookatease.com/. Chicken Masala Indianised Spring Roll- Global Kadai

This is the Indianised version of the Spring Rolls. I used Chicken mince n made a spicy masala, n used them as filling for Spring Rolls. I usually make this filling for making Murtaba or Stuffed Parotta but omitted the egg here. You can use this filling to make samosas n sandwhiches too. Didnt have enough time to decorate them, too the photograph in a hurry.

Mixed Beans Curry

Got a packet of Mixed beans from the Indian Grocery, n thought why not make a simple curry for chappati. Didnt go for any elaborate masala, just added some aromatic spices, indeed it was a semi dry gravy.

Okra Pachidi with Coconut Milk

Jelly Custard

As the name tells this is just our plain old jelly with custard, I once saw this dessert in a supermarket, A famous Dairy company had introduced this Dessert. Luqaimat- This is nothing but cute little dumplings in syrup. Arabic food is always my favorite n every time I visit local fairs here We would never miss buying these Luqaimats made by the local beduins here. Tangy Tomato n Paneer Alphabet Pasta

This is my kids fav, He loves that little Alphabet Pasta with tangy tomato, He loves reading out the alphabets loud. I added Paneer to this dish, actually you wont be able to see them as Ive cubed them very small the size of the pasta. You can use anyother pasta n cube the paneer according to the size.

Again a sprouted dosai, this is more or less like Pesaratu  but its made with sprouted moong beans rather than with soaked moong dhal, Again this doesnt need any fermenting n goes well with chutney n Sambar.

Fruit custard

This is a very easy n tasty dessert to prepare, Add fruits to your choice, there is no stead fast rules. I wanted to have a colourful combo so I added  Grapes for green, orange for orange, banana for white, n marashino cherries for red colour,  n decorated with marashino cherries.  More than anything adding the cherries adds a new dimension to the custard and gives a new taste. this is my son's

Protein Packed Sprouts Dosai

This Dosai is very easy to prepare n needs no fermentation  you just need to sprout the beans, soak the rice  grind n make dosas. This dosai is very lavorful with jeera, fennel n peppercorns along with onion n ginger n garlic. If You just keep the batter for 1/2n hour n make dosas they would be really crispy. Serve them along with Coconut chutney. Try this healthy dosa you will surely like them.

Cauliflower leaves Pakoda/ Fritters

Vengaya Parotta/ Fried Onion Parotta

Vengaya Parotta is a special dish made for Son in laws in the coastal district of Nagapattinam. It is  deep fried n served with Chicken or Mutton gravy. Pani Puri/ Gol Gappe- ICC

Making Pani Puri is always a dream for me coz Whenever I tried making the puris it would be a total disaster, this time it was a success. Yeah! finally In made Pani Puri from scratch, it was a total hit n the whole  plate got finished within minutes. My puris was smaller than the normal size so it didnt hold lot of filling. Once again Posting a vareity of Sambal. This is spicy, sour n perfect accompaniment for all dishes. It just needs onions, preserved lemon, coriander stalks, gravy n green chilli. Yes, gravy chicken, mutton, dhal gravies would absolutely suit this. Ive used Muttai Paruppu Kuzhambu to make this sambal. Tandoori Chicken Tortilla Wrap

Now its a non-vegetarian wrap. I actually learnt this wrap from a famous Indian Chef Ajit kumar in UAE. He was demonstrating this wrap in a food feista conducted in a hypermarket here. Mixed Sprouts And Soy Cutlets/ Patties

Still had some sprouts in my fridge and thought why not make them into cutlets. Didnt want to use regular potatoes for filling hence used soy kheema and to bind them I used oats powder. Broccoli and Potato Bonda

Got bored of making the same old patato bonda. Give a new try with these broccoli and Potato Bonda.
Even kids who dislikes briccoli will love this crispy and Tasty bonda.



You need:
Broccoli and Potato Stuffing                        1/3rd recipe
Besan flour                                                  1/2cup
Rice Flour                                                    1/4cup
Chilli powder

Wheat flour                                    1 1/4cup
Broccoli and potato stuffing            1/3rd recipe

This is my first recipe using the broccoli stuffing. I made Pulkas with Soy flour, wheat flour  and the stuffing.The pulkas were extremely soft and tasty. There was no bitterness from the broccoli and my son who dislikes green vegetables gobbeled up the pulkas fast. You can serve them on their own or serve it with raita.
This also makes a great picnic dish and also perfect for your kids lunch box

Gothumai ravai Kheer/ Cracked wheat/Dalia Kheer


Gothumai ravai or Dalia or cracked wheat is something what we usually make upma for diabetic people. But here is the recipe for a delicious kheer and it is sinfully rich. This kheer is served compulsory in South Indian Muslim weddings. No wedding cuisine gets complete without this kheer and is usuallu topped with thakkali inippu pachadi (sweet tomato chutney) we call it either phirni or kanji.

Greek Sandwhich

Greek Sandwhich is nothing but Felafels with tahina and greek sauce in Pita bread. This is a filling Sandwhich and can be had as dinner along with Fattoush an Arabic Salad. If you dont want fried felafel then bake it, Still tastes very good. If you dont get Pita bread then substitute with chappti or rumali roti or our very own bread.

Call it as Chutney or pickle this sweet mango chutney tastes very delicious. Its both Sweet and Sour. Use only unripe mangoes for this chutney but if you are able to obtain only ripe mangoes reduce the cooking time as the mangoes turn into pulp. Store in a sterilized glass jar in the refrigator. Baked Cheese Samosas

Since I had these cheese samosas in a local restaurant its been my favorite but you know its loaded with calories so I wanted to make a baked version of it with low fat cheese slices. Roti Jala/ malaysian lace pancakes

Roti Jala or lace pancakes is made with a specially desingned cup. You can buy this in any big stainless steel vessel shop. This is a special breakfast made during both Eid ul fitr and Eid ul Adha our two festivals. In our grandmother's house we used to make this jalar in huge quantity as its a sure hit and not only that we used to get up at 2 am to prepare this delicacy. Making Jalar is an art.

Apple and cinnamon Kesari

This is my 50th post and Iwanted to post a sweet. Kesari was the first thing that came to my mind but didnot want to post the usual kesari. Dry Prawn Fry

Dry Prawn Fry the all time favorite and the perfect side dish is very easy to make and spicy too.

Avacado and walnut muffin

Wanted to try something new with avacado. Have used it in milkshakes and smoothies but never baked. So here is the result of the new venture Avacado and walnut muffins. Slice the warm muffin in half and apply butter( slightly salted and I always use the low fat one), What a perfect breakfast it could be and accompanied by a milkshake, no words to say. Easy Bread Rasmalai

Quail egg pepper fry / kaadai muttai milagu varuval

Arisi milagai podi

This mizhagai podi recipe is from my mother and its also my favorite. I add little Sugar  to this podi along with Gingelly oil  and have it with dosai or idli. You can increase the amount of chillies if you want it to be fiery hot.

You need:
Par boiled rice                          2 cups
Urad dhal                                 1/2 cup
Chana dhal                                1/4 cup
Pepper

Felafel sauce


Felafel sauce is a dip made with tahina and curd. You can also use this dip with crackers, nacho chips, or just with juilliened vegetables.

You need:
Tahina                    1tbsp
Curd                       1/2 cup
Salt

Tahina is an arabic sauce. It is a base to many dishes especially hammus( chick pea paste). It is very easy to make. The recipe is as follows

You need:
Roasted sesame seeds                1 cup
Olive oil
Salt


Preparation:
Put the sesame seeds in the blender.
Start adding olive oil and blend. Stop adding oil when you get a smooth paste.

Dhodal (Traditional Cocunut Halwa)


Dhodal is one of my favourite sweet. His grand mother used to make this sweet delicasy. I learnt this recipe from her and after lots of trial and error I got the perfect texture. Once you make this you will really fall in love with this recipe.

You need:
Coconut( medium)                 1 nos
Rice flour                               50gms
Sugar                                     100gms
Ghee

Dosai


Crispy dosai with sambhar and chutney is a sure hit and a favorite for all. Plain dosai, ghee dosai, masala dosai etc, etc., the list goes on. The measurement varies between recipes but i follow this measurement the same how my mother taught me.

You need:
Idli rice (or) Par-boiled rice                         4 cups
Urad dhal                                                    1 heaped cup

Ghee Dosai:


Instead of oil apply ghee to the dosai.

Egg Dosai:
